Food is an integral part of the cultural fabric of any given country. Today, with globalisation, it has become possible to try different cuisines from around the globe. Italian, Japanese, American and Indian cuisines will always be popular due to their uniqueness, global palatability and marketing. However, there are several lesser-known delicious, rich cuisines steeped in local culture and flavours which have not yet received recognition from the world. An openness to try new foods and flavours is an important quality that all budding chefs need to imbibe. Here are some underrated cuisines that young chef must explore.
Ethiopian cuisine
Recently, African flavours are becoming popular in India. However, African food is extremely diverse, with each country presenting its unique flavours and twists, Ethiopean cuisine being the one that stands out. The exotic flavours are simple yet complex and the food is nourishing as well- with different kinds of local vegetables, lentils and meat. A popular dish is injera, a fermented flatbread paired with small cuts of meat, lentils and vegetables.
Hawaiian cuisine
American cuisine is mostly perceived to be limited only to fast-food like burgers and fries. However, a trip slightly south to its youngest state, Hawaii, will open up a rich cuisine with Chinese, Japanese and Filipino culinary influences. As with most seaside places, Hawaiian food is rich with sea food and rice, and is usually light to digest due to the hot weather. Poke is a popular meal here which includes raw fish diced with rice and fresh vegetables.
Hungarian cuisine
Hungarian cuisine is starkly different from other European cuisines. In general, it is rich, decadent and also quite greasy- an ultimate treat. The primary ingredients used are bread, sausage-type minced meats, spices such as paprika and vegetables. Halászlé, also known as fisherman’s stew, is a must try, with paprika being the star of the dish. This classic Hungarian dish is traditionally cooked in an open oven, and is popular for its unique fishy aroma, spicy taste and its vibrant red colour.
Iranian cuisine
Iranian cuisine is an amalgamation of various Central Asian cultures, but with its own authenticity. Basic components of cuisines such as rice and bread are elevated to a whole different level with the use of fragrant herbs and spices. It also includes pickles and pungent vegetables, meat, rice and bread with plenty of saffron, rose water and cardamom. One of the most popular Iranian meals is Fesenjan, a stew which features chicken, walnuts and pomegranate.
